Tatter Tot Casserole

Yields 6-8 servings

You will need:
1 bag frozen tatter tots
1 lb ground beef
1 can cream of chicken soup
1 C. frozen mixed veggies
1 C. shredded cheddar  cheese
1/4 tsp. garlic powder

Brown ground beef in skillet and set aside. In a 9x12 baking dish combine cream of chicken, tatter tots, veggies, and garlic powder. Add beef and mix well.

Bake at 375 for 30 minutes. Top with cheese, and bake an additional 15 minutes.

Alfredo and Jalapeño Chicken

Yields 4 servings.

This same recipe is also great for salmon.

You will need:
1Tb. butter
4 chicken breasts
1Tb. flour
1 15oz jar Alfredo sauce
1/2 cup sliced jalapeños

Melt butter in skillet. Add chicken and cook 2 minutes on each side until light brown. Pour in Alfredo sauce. Mix in flour to thicken sauce. Add the jalapeños. Simmer for 15-20 minutes on medium heat until chicken is cooked thoroughly.

Tuna Noodle Casserole

This yields 6-8 servings.
You will need:

1 14oz box spiral noodles
1 can cream of mushroom soup
1/3 C milk
1 12oz. can tuna (drained)
1 can peas (drained) (or 1C frozen peas or mixed veggies)
1 C crushed Pringles chips

Preheat oven to 350.

Boil a pot of water, and cook noodles. While noodles are cooking; mix cream of mushroom soup, milk, peas, and tuna in 9x12 baking dish. Once noodles are cooked, drain them and add to the tuna mixture. Mix well. Top with the crushed Pringles. Bake for 20 minutes.

Great with garlic bread!

Pepper Jelly Baked Chicken

You will need:


1/2 C. of pepper jelly
1/4 C. lime juice
5-6 chicken breasts


Place chicken breasts in a glass baking dish and set aside. In a bowl, combine pepper and lime juice. Pour over chicken. 


Bake for 30 minutes at 375 degrees. 


Great with baked potatoes, and a good diabetic recipe.

Quick and Easy Skillet Chili

This recipe yields about 8-10 servings.


Grocery List:
1 lb ground beef
2 cans red kidney beans
2 cans chili beans
1 can stewed tomatoes
1/2 C. chopped onion


Brown the hamburger in skillet, add the 4 cans of beans, tomatoes, and onion. Season as you like. I like to use the Mrs. Dash Extra Spicy blend and season all.
Simmer over med. heat for 20 minutes, stirring often.


This is great for a quick fix on a cold day when you don't have time to pull out a crockpot and let it cook all day.

Mini Cheesecakes


This recipe will yield 48 mini cheesecakes.


Grocery List:


1 (12 ounce) package vanilla wafers
2 (8 ounce) packages cream cheese
3/4 cup white sugar
2 eggs
1 teaspoon vanilla extract
1 (21 ounce) can cherry pie filling



  1. Preheat oven to 350 degrees.
  2. Line miniature muffin tins (tassie pans) with miniature paper liners.
  3. Crush the vanilla wafers, and place 1/2 teaspoon of the crushed vanilla wafers into each paper cup.
  4. In a mixing bowl, beat cream cheese, sugar, eggs and vanilla until light and fluffy. Fill each miniature muffin liner with this mixture, almost to the top.
  5. Bake for 15 minutes. Cool. Top with a teaspoonful of cherry pie filling.

Feel free to play with different topping such as: strawberries, blueberry pie filling, mini chocolate chips, or enjoy plain.

White Lasagna

Also known as Alfredo lasagna.  This yields about 6-8 servings

Grocery List:
1 lb ground turkey
1 box non-boil lasagna noodles (I like the Barilla brand best)
1 medium bag (2 cup) shredded Parmesan cheese
1 small bag (1 cup) shredded mozzarella cheese
1 pint heavy whipping cream
1 bag washed spinach

Brown turkey in skillet on med. high heat. While that's going, bring the heavy whipping cream to a boil. Reduce heat and add 1tsp. pepper, 1 Tb. butter, and 1C. Parmesan cheese. Stir often until cheese is melted and sauce is thick. Set aside.(This will be your Alfredo sauce). When the turkey is fully browned, add spinach a little at a time until the entire bag is cooked down and mixed in with the turkey meat.

Preheat oven to 375 degrees.

In a 9x9 square baking dish pour a small amount of the Alfredo sauce to coat the bottom of the pan. Place one layer of  noodles down, then a layer of the turkey/spinach mixture. Pour a small of sauce on top of the meat, then layer with both cheeses. Repeat these layers until pan is full, Making the top layer just noodle, sauce, and cheese.

Bake for about 30 minutes, or until cheese is melted and noodles are soft.

Introduction

I'll start off with a little intro. Like most little girls, I started off by cooking in my grandma's kitchen. Those skills have now followed my into my own home and with my own little family. I'm always looking for new recipes and trying to improve the ones I already have. With a two year old to chase around here at home, most of these recipes are quick and easy, with little cleanup to be done afterwards. I hope you and your family enjoy these foods as much as mine does. With that said, let's get started! =]
